All recipes and “food for thought” comments in this book were taken from NCR brochures spanning over 100 years. Unidentified quotes were taken from the NCR booklet “Human Efficiency Hints for Busy People” that was printed in 1913.
When an old-fashioned term such as “enriched” bread was used in a recipe, it was left in so as to remain as close to the spirit of the original as possible. Any comments made before the recipe is given was also taken from the original source. Any changes made are mostly in keeping the various spellings and abbreviations for measurements consistent throughout the book. For example, teaspoon is always spelled out, even if the original recipe used the abbreviation tsp.
Although some of the recipes might seem old-fashioned, the ones that were included in this book were chosen for their simplicity and timelessness.
